Mushroom Biryani Recipe - How To Make Mushroom Biryani In Pressure Cooker - Indra's Kitchen
A simple & tasty mushroom biryani, prepared using a pressure cooker.
Ingredients:
● Mushroom:200 gram
● Onion Big:1 nos
● Tomato:1 nos
● Mint leaves: few
● Corriander leaves: few
● Cumin seeds:1 top
● Fennel seeds:1 tsp
● Cashewnuts:7 nos
● Star Anise:2 nos
● Kal paasi: few
● Cardamom green:3 nos
● Cloves:3 nos
● Cinnamon: few
● Brinji leaves:2 leaves
● Turmeric:2 tsp
● Salt to taste
● Oil-4 tbsp
● Ghee-4 tbsp
● Briyani rice-200 grams
● Water 400 ml
● Curd-2tbsp
Ingredients for biryani masala paste:
● Shallots(onion small):7 nos
● Ginger:1 inch
● Garlic:1 no
● Green chillies:3 nos
● Dried red chillies:3 to 4 nos
● Mint leaves
● Corriander leaves
● Cumin seeds: 1tsp
● Fennel seeds:2tsp
● Corriander powder:1 tbsp
Add the above ingredients to a mixer grinder and grind to a paste by adding little water, you will get biryani masala paste.
Method:
Place a pressure cooker on the stove and switch on, let it heat well, now add oil and some ghee to the cooker, let it heat, now add cumin seeds, fennel seeds, cashews, spices, and roast well.
Now add onions, tomatoes, mint leaves, coriander leaves, biryani masala paste and fry well until raw smell goes away.
Now add Mushrooms and biryani rice, Mix well, add some turmeric and salt to it.
Add two tumblers of water and let it boil well.
Check for salt and spiciness. If required add by adjusting chili powder and some extra salt. Close the pressure cooker lid and leave up to two whistles on low flame. Switch off the stove. After pressure releases from the cooker, stir well the biryani gently.
Now transfer the Mushroom biryani to a plate and serve with curd raita.
Note:
1. Use any rice for your preference.

3. While preparing biryani masala paste by adding chilies, check for spiciness, if spicier, add a little amount of paste for preparation. If less adjust by adding chili powder while cooking.

Ghee Mysore Pak Recipe - How To Make Easy & Quick Mysore Pak - Indra's Kitchen
Ingredients required:
Ghee Mysore Pak Recipe - How To Make Easy & Quick Mysore Pak - Indra's Kitchen
Ingredients required:
● Gram flour - 300 grams
● Sugar-300 grams
● Ghee-300 ml
● Water-¼ cup
Method:
Roast well the gram flour without adding ghee in a Kadaai, let the raw smell go away in the flour, now switch off the flame and transfer it to a plate, let it cool down, Now sieve well the roasted gram flour, transfer the entire flour to a bowl, now add some ghee to the gram four and mix well without any lumps. keep aside.
Prepare sugar syrup by adding sugar and water to Kadai, let sugar dissolves well and boil well and allow to one string consistency.
● Sugar-300 grams
● Ghee-300 ml
● Water-¼ cup
Method:
Roast well the gram flour without adding ghee in a Kadaai, let the raw smell go away in the flour, now switch off the flame and transfer it to a plate, let it cool down, Now sieve well the roasted gram flour, transfer the entire flour to a bowl, now add some ghee to the gram four and mix well without any lumps. keep aside.
After reaching one string consistency, transfer the gram Flour & ghee mix and stir continuously, let it cook well and the mixture does not stick to the pan. Now add one tablespoon ghee if u feel necessary and stir and switch off the flame. Now pour the Mysore Pak mixture in a greased tray and spread

INGREDIENTS
1. Marie biscuits:200 grams
2. Butter (at room temperature):100 grams
3. Sugar:100grams
4. Cashew nuts:25 grams
5. Cocoa powder: 1.5 to 2 tablespoons
Method of preparation;
To begin with, powder Marie biscuits in a mixer and sieve well, powder sugar and cashew nuts separately and keep aside. In a large bowl, add powdered Marie biscuit, sugar, and cashew nuts, mix well, now add cocoa powder 1.5 tbsp or 2 tbsps, and then finally add butter for mixing. The Mixture must be bound well .If butter is not sufficient then add some more butter to make a thick dough. Now take a one-inch depth tray and grease it.

Once the chocolate is all set, take away from the tray and store it in an airtight container and store it in the fridge and consume within 15 days.

SAWAN - Chicken Biryani Sawan With A Full Fried Chicken On Top - Chicken Biryani For Six People
Sawan is a large plate of biryani or yellow coloured rice with Fried chicken on top. The biryani can be either chicken, mutton, beef, or vegetarian. The rice too can be basmati or seeraga samba or just normal rice.
But the idea of a sawan is 4 to 8 people eating out on the same plate.
The origin of the tradition of the Sawan is unknown..
Chicken biryani and mutton biryani sawans are the most popular though there's also beef and now vegetarian. The rice is often served with a side of sweet tomato or mango pickle, gravy, Maldive fish sambol, cutlets and for desserts Watalappam or gulab jamun.
The Sawan is supposed to foster community spirit, in Srilanka, a Sawan is made by the Muslim community during the Ramadan time. Their favorite food during this celebration is Sawan. They not only make Sawan for themself but they also gift Sawan to other people. This tradition is like the Hindus exchanging sweets during the Deepavali festival.
Sawans are also served at wedding or festival celebrations. Although Hindus and Muslims are best known for using the sawan, it's now become a general Asian thing shared by different communities.
There are a lot of hotels now offering Sawan. We can choose the type of rice which should be used and if its biryani we can choose what biryani we want. Also, the fried chicken can be either full or half. The price ranges from 2500 for a chicken biryani Sawan to 4500 for mutton biryani Sawan.
There are people who also prepare this Sawan privately on pre-order.
This video was shot at my cousin's place. We got a Sawan as a gift from beruwala (western province of Srilanka, an excellent tourist destination). The Sawan tasted delicious. The basmati was perfect and did not stick to each other. The masala was perfect with lovely flavors. Lovely chicken biryani with perfect side dishes. We also had wattalappam for desserts.

The durian fruit is a native of Thailand, Malaysian, Vietnam region. The fruit is covered in hard thorns. Imagine a jackfruit but the skin thorn is bigger and harder. It is said when the durian fruit has riped in a tree, even the elephants won't come near because the fruit might fall anytime.
The durian fruit has a different smell, and people eating it for the first time might find it strange because of the smell
I personally am not very fond of the smell though. But people who like the fruit won't miss it because the fruit is so much healthy.
The taste of the fruit is like sweet butter, with a mix of milk. Even the texture of the fruit is like butter. Good sweet fruit is yellow in colour. The yellow coloured durian is firm and sweet.
In some durian the fruit might be in white colour and may not be firm, those fruits lack the taste and
The durian fruit should not be overeaten because of the heat it produces in the body. It is said, a glass of milk should be drunk in the evening if we ate durian fruit in the day time.
In Srilanka, this fruit is seasonal and we get the durian fruit durian May to august month.

Eating Thai Food At Rathnapura - SriLanka - N.I.K Thai Foods - Tasty Thai Food

Rathnapura is a town in Sri Lanka famous for its Gemstones. Gemstones like the sapphires are mined in and around Ratnapura.
In the 70s, 80s, and 90s, Gem traders from Thailand would come here to buy gemstones. These buyers would stay for 3 to 4 months looking for Gemstones. Since their stay is long they would bring their cooks from Thailand to cook Thai food for them.
These cooked would have local people as their assistant, who at a later point learned the techniques of the Thai style cooking.
They opened their own place serving Thai food..
There are few places in Ratnapura, small outlets that are specifically for thai food.
I went with my cousin, to have lunch here. we ordered for stem rice, chicken pak Kao Pao, fried fish in thai red sauce, Kang Kung.
The dishes were great. there was the usage of sauce in every dish. there was a different taste to the dishes they served.
I also tried with the lumpia sauce that they had. which was tangy and spicy.
The food was great, and I loved the flavors.
We also took a takeaway of the garoupa fish in red Thai sauce. An amazing taste. It's a deep-fried fish with sauce. The sauce gives this fish a unique flavor. Dipping the fish in lumpia sauce was also excellent...

The golden hill tea centre is situated on the Colombo to Badulla highway, just before the haputale town. This happens to be an excellent hotel or restaurant near haputale town.
This place is famous for its Tea. so if you're traveling this way and it's not your breakfast, lunch, or dinner timing then you can try their Tea at least.
Since this place was opened after the lockdown, the menu options were very limited. But luckily they had Nasi Goreng, which I had a chance to try.
The ambiance is something that I should mention. It was very pleasing with many plants and trees. The tables n chairs were wooden and looked great. It was a great place to have your meal with peace of mind.
The dish arrived soon after I ordered it. It was hot. Nasi Goreng is Indonesian fried rice. This Nasi Goreng had chicken pieces, sausages with vegetables like the carrot leeks and sauce topped with a fried egg.
The chili paste that they give with the fried rice is also an excellent combo.
The taste was amazing. Although I haven't tried the real Nasi Goreng in an Indonesian restaurant, this SriLankan version of Nasi Goreng was perfect.
So if you happen to be traveling this way don't hesitate to make a pit stop at this place and try their food !!

CHICKEN GOLD COIN - A Tasty Non-Veg Snacks - Easy Chicken Snack Recipe - Snack For Kids
Ingredients;
1- Boneless chicken
2- Onions
3- green chili
4- Ginger garlic paste
5- curry leaf, coriander leaf, mint leaf
6- Salt
7- Turmeric powder
8- Pepper
9- Bread
10- white sesame seeds
11- oil Grind the chicken. Finely chop or grind the onions and green chili. , mix chicken, onions, green chili, ginger-garlic paste, curry leaf,coriander leaf,mint leaf, salt, turmeric powder, and pepper together.
Now cut bread pieces into round shapes using a round tumbler.
Apply egg coating on the round bread piece, Add the chicken paste mix as shown in the video.

Squid Fry - Kanavaai Perattal - Calamari Fry - CuttleFish Fry Recipe
The Squid or the cuttlefish is hard to find during this time. So somehow we got a small portion of cuttlefish for the video.
The calamari has to be cleaned properly, there is a blueish ink-like substance that has to be wash properly. Then it is cut and boiled.

The boiled cuttlefish is sauteed with onions, green chili, curry leaf, rambai or pandan leaf, bajji chili, or (bell pepper can be used), tomato, chili powder, masala, salt to taste and finally pepper. once the sauteeing is over the calamari fry is topped with coriander leaf
