I also wanted to take a few shorts of how they make the mutton biryani. So in order to do that I need to be at their place around 3.30 or 4 early morning..that’s what I thought. So I reached Bangalore the previous evening. Took up a room in madiwala along with Krishi, who is my 10-year-old cameraman ( I don’t have much of a choice . Do I?) I also scheduled Ola cab for the next morning around 3.15. The cab arrived perfectly on time and we started on time.

We reached mani dum biryani around 3 .45 in the morning.., by the time we got there the cooking process had started and the meat was being cooked. Krishi and I were the first people to arrive there. Because of the chill climate, we were drawn towards the fire, cooking the biryani.., the flavor of the meat at its masala could be felt now itself

Once the meat was cooked to perfection, the rice was transferred to different vessels and washed. The rice was then added to the big vessel where the biryani was being cooked.

But this time there were no flames to the fire but just the heat from the charcoal.., with this heat the rice along with meat water and masala was continuously stirred till the water evaporated. Ghee was poured into the biryani which was continuously being stirred and the lid was put on top quickly. A soon as they put on the lid, all the hot charcoal from the bottom was put on top of the lid.
By this time, the crowd had started to arrive and they were standing in queue for their share of biryani. Once the dum was done, exactly at 6 am the charcoal from the lid was cleared and the biryani was made ready to be served. The first spoon of the biryani was taken and fed to the fire by offering a little prayer On the other side, tokens were given. After getting these tokens, customers came to this big vessel where the mutton biryani was being distributed. Cucumber, lemon, and curd pachadi were placed nearby so that the customers could help themselves.

My first-time experience in having a hoskote biryani that too at 6 am. The quantity of the biryani was justified. The taste was good with generous mutton pieces. Though I 've had better biryani than this, having a hot mutton biryani at 6 in the morning in the cold climate was AMAZING. A little bit of lemon squeezed into the biryani had a lovely taste to it, and I really loved it. The curd pachadi also tasted good when mixed with biryani.
                                           
One thing that amazed me was the workers there. They all did their part perfectly without any instructions. And everything was done to the timings perfectly. Altogether a lovely experience of traveling so far for this biryani and to have it hot in a chill climate was a bliss. Will return to hoskote to try out other morning biryani shops.
