SAWAN - Chicken Biryani Sawan With A Full Fried Chicken On Top - Chicken Biryani For Six People
Sawan is a large plate of biryani or yellow coloured rice with Fried chicken on top. The biryani can be either chicken, mutton, beef, or vegetarian. The rice too can be basmati or seeraga samba or just normal rice.
But the idea of a sawan is 4 to 8 people eating out on the same plate.
The origin of the tradition of the Sawan is unknown..
Chicken biryani and mutton biryani sawans are the most popular though there's also beef and now vegetarian. The rice is often served with a side of sweet tomato or mango pickle, gravy, Maldive fish sambol, cutlets and for desserts Watalappam or gulab jamun.
The Sawan is supposed to foster community spirit, in Srilanka, a Sawan is made by the Muslim community during the Ramadan time. Their favorite food during this celebration is Sawan. They not only make Sawan for themself but they also gift Sawan to other people. This tradition is like the Hindus exchanging sweets during the Deepavali festival.
Sawans are also served at wedding or festival celebrations. Although Hindus and Muslims are best known for using the sawan, it's now become a general Asian thing shared by different communities.
There are a lot of hotels now offering Sawan. We can choose the type of rice which should be used and if its biryani we can choose what biryani we want. Also, the fried chicken can be either full or half. The price ranges from 2500 for a chicken biryani Sawan to 4500 for mutton biryani Sawan.
There are people who also prepare this Sawan privately on pre-order.
This video was shot at my cousin's place. We got a Sawan as a gift from beruwala (western province of Srilanka, an excellent tourist destination). The Sawan tasted delicious. The basmati was perfect and did not stick to each other. The masala was perfect with lovely flavors. Lovely chicken biryani with perfect side dishes. We also had wattalappam for desserts.
